Romanian Green Bean Soup [Better Choice]

One of the most overlooked summer vegetable is the green bean. That’s probably because aside from boiling or steaming green beans, we’re not really sure what to do with them.

Growing up in a Romanian household, we always had fresh green bean soup in the summertime. It’s still one of my favorites today. In fact, we just made a huge pot of it last week. I love the fact that it tastes nothing like the canned, boiled green beans. And don’t worry if you don’t have the slim yellow green beans on hand, regular green beans work just as well.

Recipe tip: Add half a can of mild Rotel tomatoes with chiles to give this soup a bit of a kick.
