We categorize our recipes 3 ways, good, better, best.

  • GOOD recipes contain an above average amount of fiber
  • BETTER recipes contain a higher amount of fiber
  • BEST recipes contain the highest amount of fiber

Pineapple Chicken Quinoa Salad [Good Choice]

Pineapples are tasting great right now, and I recently learned how fun it is to add some to an otherwise salty dish. This salad does a great job of pumping up the fiber count with quinoa. Use tri-color quinoa if you want the grain to offer more crunch.

Use Gardein Chick’n Strips or a can of chickpeas to make this recipe vegetarian.

Slimming tip: Use only 1/2 the amount of nuts to cut out some fat (and slim down the recipe)

Egg Stuffed Peppers [Better Choice]

Instead of adding vegetables to your eggs, how about adding eggs to your vegetable? This keeps the egg from being center-stage. And all those veggies really increase your fiber intake. A little pico de gallo and avocado will make this dish even more delicious.

Slimming Tip: Use less eggs (or simply use egg whites) to cut down the fat in this recipe and make it more slimming.

Lemon, Garlic, and Thyme Brown Rice [Better Choice]

It’s all about flavor when you replace your white rice with brown. The spices in this recipe do an amazing job of creating a brown rice side you can look forward to enjoying, instead of dreading.

Slimming Tip: Use low fat, low sodium broth, or better yet, blend some vegetables to a pulp in the water and have homemade broth with more fiber in minutes!

Spiced Hot Fruit Bake [Best Choice]

There’s something about cooking fruit that makes the sweetness literally ooze out. Add in the slight tartness as well, and you end up with a wonderful dessert that might taste similar to pie, but is actually weight loss friendly.

It may be hard to find fresh cranberries this time of year, so check the frozen fruit section – some berry mixes pack cranberries in as well. If that’s not available, use blueberries instead.

Slimming Tip: Note the extra fat from butter and coconut oil is optional. So choose one and skip the other. The focus is the sweet fruit anyway, right?

One Pot Vegetable Quinoa [Best Choice]

There’s not much convincing here. We all need easy, one pot meals that save us time and energy. I love the veggies and chickpeas in this one. Serve it with some fresh cut watermelon for a perfect light supper.
